Job Title: Chef de Cuisine (Chinese Cuisine)

Job Overview

Kandima Maldives is seeking an experienced Chef de Cuisine with expertise in Chinese cuisine to oversee kitchen operations, ensuring excellence in food quality, presentation, and hygiene standards.

As the Chef de Cuisine, you will be responsible for managing kitchen staff, maintaining a well-organized kitchen, developing innovative menus, and ensuring that every dish reflects authenticity and excellence. You will also be in charge of staff training, food safety compliance, and kitchen productivity to deliver a top-tier dining experience to Kandima’s guests.


Key Responsibilities

  • Oversee the daily operations of the Chinese cuisine kitchen, ensuring efficiency, quality, and consistency in every dish.
  • Lead, train, and develop the kitchen brigade to maintain high culinary standards.
  • Design and update menus with innovative Chinese dishes that cater to diverse guest preferences.
  • Ensure that all recipes, food preparation techniques, and presentation meet the highest industry standards.
  • Monitor kitchen productivity and ensure smooth execution of rostered shifts.
  • Maintain an up-to-date recipe database, including menus, recipe cards, and preparation charts.
  • Implement and oversee strict food storage practices to prevent spoilage and cross-contamination.
  • Manage inventory, ordering, and stock control to optimize kitchen efficiency.
  • Conduct regular quality control checks on food products, ensuring compliance with HACCP and food safety standards.
  • Work closely with other chefs and departments to enhance the overall guest dining experience.
  • Stay updated on industry trends to bring new and exciting Chinese culinary innovations to the resort.

Qualifications & Experience

  • Minimum 2 years of experience in a similar role at a five-star luxury resort or fine dining restaurant.
  • High school graduate with a culinary school certification specializing in Chinese cuisine.
  • HACCP trained and certified with a strong knowledge of food safety regulations and industry standards.
  • Proven experience in leading a kitchen team and conducting staff training.
  • Strong organizational and time management skills to oversee multiple kitchen operations.
  • Ability to work in a high-pressure environment while maintaining creativity and precision in food preparation.
  • Excellent command of the English language, both written and verbal.
  • A deep passion for culinary arts and a strong commitment to delivering an exceptional dining experience.
